3lb rhubarb(prepared weight)
3lb sugar
juice 3 oranges
(1oz ginger can be added if you want)
Wash and trim rhubarb and cut into small chunks. Place in alternate layers with sugar in a deep bowl, add orange juice and leave for about 8 hours.
Put the contents of the bowl into a pan,(with bruised ginger if using tied in a muslin bag.)
Bring to boiling point, and boil rapidly until setting point is reached. Do not allow it to stick to the pan
Pot up into clean warm sterile jars.
Allow to cool. Can be eaten straight away, but does improve with age
