Recipe: Autumnal Chutney

Makes about 1.5kg (3lb 5oz)

INGREDIENTS:

  • 225g (8oz) peeled onions, finely chopped
  • 300ml (10fl oz) cider vinegar
  • 450g (1lb) cored and peeled cooking apples, finely chopped
  • 350g (12oz) green tomatoes, chopped
  • 450g (1lb) peeled and seeded marrow, finely chopped
  • 350g (12oz) granulated sugar
  • 115g (4oz) sultanas
  • 2tsp cumin seeds, crushed
  • Salt and freshly ground black pepper

    METHOD:
  • Place the chopped onions in a saucepan and pour over half the vinegar.
  • Bring to the boil and simmer gently for about 10 minutes.
  • Add the apples, tomatoes, marrow, and remaining vinegar.
  • Stir in the sugar, sultanas  and cumin.
  • Stir over low heat until the sugar dissolves, then bring to the boil, and simmer gently, stirring occasionally, for about 20 minutes until soft, mushy and slightly juicy.
  • Stir in seasoning to taste.
  • Spoon into warm sterilised jars and seal with non-corrosive lids.

 Allow to cool and store for 6-8 months.
Once opened, keep in the fridge and use within 2 weeks!!
